Happy Weekend my Lovelies!
Happy Weekend my Lovelies! I will be spending my weekend in Halifax at a yoga workshop with Nischala Joy Devi, master teacher of yoga, world renowned healer and author of The Secret Power of the Yoga Sutras. I am super excited:) Also, a few friends and I will be having dinner and drinks Friday and Saturday night... clearly I won't be drinking much as I have to be up at 7am for an asana class from 8-9am!

Kate Middleton wedding dress
I woke up at 6am this morning and couldn't fall back to sleep... so found the royal wedding on the Internet and watched it. I don't think I would plan my day around this event, but I have to admit it was nice to see. Being Canadian and all I thought I should post Kate Middleton's dress, it was designed by Sarah Burton at Alexander McQueen. I really like the neck in the front and the back, and also love the lace! This wedding makes me miss London soooooooooooo very much:(

My Campground
These are some photos my lovely friend Leah took of her parent's Campground. It's on the Annapolis River, which runs through our beautiful Annapolis Valley. Her and I edited them together! She is a great photographer! Stay tuned for more;)

Spinach Lasagna Rolls
This is the veggie meal Lori and I made on Saturday night:) It was sooooo very yummy! They are very simple to make!
Spinach Lasagna Rolls
(Printable Recipe)
What you'll need:
9 lasagna noodles, cooked
10 oz frozen chopped spinach, thawed and completely drained
15 oz fat free ricotta cheese
1/2 cup grated Parmesan cheese
1 egg
salt and fresh pepper
32 oz tomato sauce
1 cup part skim mozzarella cheese, shredded
What you'll do:
Preheat oven to 350°. Combine spinach, ricotta, Parmesan, mozzarella, egg, salt and pepper in a medium bowl. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.
Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle.(make sure you do this because I forgot!) Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles. Ladle sauce over the noodles in the baking dish. Put foil over baking dish and bake for 40 minutes, or until cheese melts. Makes 9 rolls.

Happy Easter Weekend!
I am super excited for this weekend! I am doing the Yoga of Silence tonight and all day tomorrow! I can't wait to see what I discover. Please send me positive thoughts! Saturday, Lori and I are having a lovely Vegetarian supper complete with a Cadbury Creme Egg McFlurry for desert and perhaps a drinky poo of some sort in celebration of our 6 days of doing The Shred! Can't wait for Easter Sunday and the arrival of the Easter Bunny;) I wonder what s/he will bring... How much fun would an Easter Egg hunt be?!?! and I imagine I will relax on Monday and do some yoga and reading:)

30 Day Shred
My friend Lori and I just started this 30 Day Shred. Good, good times... I actually kicked my own butt! I really enjoy Jillian Michaels but I seem to call her some choice names while we are doing what she calls the 20min workout but Lori says is 27min. It says you can lose up to 20lbs in 30 days, but I will be happy with 10lbs and much more toning. I also stared the Abs diet too, which I am trying to follow but chocolate calls my name so very much and it is so hard to say no... As a reward for doing this for 6 days Lori and I are going to get a Cadbury Creme Egg McFlurry on Saturday! I can't wait!!!

Happy, Happy Weekend!
I will be doing this all weekend my lovelies... JK! Perhaps someday I will be able to do this, but I am guessing it's not going to be this weekend! Although, I do have yoga teacher training all weekend which should be super fun! And I imagine I will be watching some funny films as well as Eat, Pray, Love for the 100th time;) I also found a fiction book I love! It's called Various Flavours of Coffee by Anthony Capella, it is sooooooooo good! I imagine I will be reading a few pages of this also! Can't wait!!!

Ultimate Creme Egg Cocktail
Taking it's inspiration from the Cadbury's Creme egg phenomenon, the yoke created from using delicious coloured white chocolate. The white fondant is blended together with vanilla vodka, chocolate bean flavoured creme de cacao, a delicate mix of white chocolate and vanilla aromas from Mozart white chocolate liqueur. Served in a chilled martini glass with mini creme eggs and milk chocolate shavings, creating the ultimate Creme Egg Cocktail.
OMG! I found this on FB as an advert for a bar in Dublin, Ireland called The Mint Bar... do you think it would be worth the trip just to try one?!?! It looks sooooooooooooooo amazing!!! Perhaps the Easter Bunny could bring me one;)
